Rosy Macaroni and Cheese

Yield: Makes about 3 1/2 cups or 7 side dish se



1. In 1 1/2-quart saucepan over medium heat, in hot margarine, cook onion until tender.

2. Blend in flour, mustard and pepper until smooth; gradually stir in V-8 juice. Cook, stirring until thickened. Remove from heat; stir in 3/4 cup cheese and macaroni.

3. Pour macaroni mixture into 1-quart casserole. Bake at 350 F. for 25 minutes or until hot and bubbly; stir.

4. Top with remaining cheese; bake until cheese is melted.

Makes about 3 1/2 cups or 7 side dish servings.

“This was a nice variation on the standard mac & cheese recipe and it was easy to make. I was hoping it would make a tomato cheese sauce similar to Spaghettios, but it was a completely different flavor. My husband and I both liked it as something different, and I will make it again, but next time I will experiment a bit. I will try regular tomato juice instead of V-8 juice. Also, I'm not an onion fan, & although I diced the onion as small as I could, the onion pieces were still noticeable to me, so next time I will either sub onion powder (for flavor) or leave the onion out completely. Thanks for the recipe submission. I love to try new things. Happy cooking, All! :D”
