Italian Sausage and Peppers
Yield: 12 servings
Ingredients
| 3 | pounds | Italian sausage links, cut into 3/4- inch slices | |

| 4 | medium green peppers, cut into thin strips | ||
|
|
|||
| 1 | medium onion, thinly sliced and quartered | ||
|
|
|||
| 1 | Tablespoon | butter | |
|
|
|||
| 1 | Tablespoon | olive oil | |
|
|
|||
| 3 | Tablespoons | chicken broth | |
|
|
|||
| 6 | plum tomatoes, chopped | ||
|
|
|||
| 1 | Tablespoon | fresh minced parsley | |
|
|
|||
| 1/4 | teaspoon | salt | |
|
|
|||
| 1/4 | teaspoon | pepper | |
|
|
|||
| 1/2 | teaspoon | lemon juice | |
|
|
|||
Directions:
In a Dutch oven, cook the sausage over medium heat until no longer pink; drain.
Add the remaining ingredients; stir. Cover and cook for 30 minutes or until vegetables are tender, stirring occasionally.
Serve with slotted spoon.
