Italian Stuffed Eggs

Yield: 8 servings



Remove egg yolks from egg whites. In a small bowl, mash egg yolks with a fork. Add 1 tablespoon oil, onion, garlic, salt and pepper. Mash until well blended. Add basil and parsley; blend well.

Gradually beat in the remaining oil until mixture is smooth and fluffy. Stuff mixture into whites and sprinkle with paprika.
