Oriental Chicken And Rice Soup

Yield: 4 servings



Rinse chicken with cold water and pat dry with paper towels. Cut into 1 inch pieces. Heat broth and gingerroot in a large saucepan; add chicken. Simmer 5 minutes. Add carrots; simmer 5 minutes or until chicken is thoroughly cooked.

Stir in rice and pea pods. Remove from heat; cover. Let stand for 5 minutes. Remove gingerroot. Sprinkle with green onions.
